Meet Swoonworthy Sourdough — Wild-Yeast Bread Two Doors Down

Swoonworthy Sourdough has been baking in Luling since 2024.

Wild-yeast starter. No commercial yeast. Bread fermented long enough that your gut can actually handle it. Cookies, bagels and breads, leavened with wild sourdough starter and sweet treats — all from scratch, all from a single shop.

They also make dog treats. The line is called the Three B Barkery, and the treats are made from human-grade ingredients with canine superfoods. If you’re shopping for a four-legged friend, that counter is its own reason to stop in.

Why the slow approach matters.

You can buy bread anywhere. Most of it is made with commercial yeast that rises in a few hours. It tastes fine, it fills you up, and a lot of people can’t digest it well — the gluten doesn’t get a chance to break down.

Sourdough, made the old way, ferments for 24 hours or more. The wild yeast and bacteria do most of the work of breaking down the gluten before the bread ever hits your oven. The result is bread your body recognizes as food, not as a problem.

That’s what Swoonworthy does. It’s the slow version of the thing in a world that mostly does the fast version.

I look for makers who do the slow version of the thing when the fast version is cheaper and easier. Sourdough is the test case. Swoonworthy is the maker, from scratch. That’s the standard.
